Mango Salsa and Cinnamon Chips

What you need: 

5 fresh mangos, diced
2 jalapenos, seeded and finely chopped
1/2 cup fresh cilantro, chopped
1 lime, juiced
10 whole wheat tortillas
cinnamon-sugar mixture, to taste

What you do: 

1. Combine mango, jalapeno, cilantro, and lime juice. Refrigerate for a couple of hours to allow flavors to blend.
2. Preheat oven to 350 degrees F. Cut the tortillas into 8 triangles. Brush with olive oil or spray with cooking spray. Lightly sprinkle with cinnamon-sugar mixture.
3. Place in a single layer on a cookie sheet. Bake for approximately 10 minutes or until slightly crisp. Repeat with remaining triangles. Serve with mango salsa.

SO HOW'D IT GO?

Salsa didn't work out for me. The consistency was right, but it didn't taste like mango salsas I've tried in the past. It was a very odd combination of sweet-spicy.

The chips were fabulous. I ate them later by themselves as a snack.
