Mango Pancakes

What you need: 

3/4 cup flour
4 tablespoon vegan coconut flakes / vegan shredded coconut
1 cup mango puree (approx. 2 mangoes pureed)
1/2 cup coconut milk
oil

What you do: 

Mix all ingredients together (I used my food processor, and it worked wonderfully). Heat a little oil in a crepe pan; when warm, spoon pancake mixture into pan and cook until browned, flip, and brown on the other side.
I served these w/Jennas Fruit Syrup recipe, which I made with bananas --it was very tasty.
Please also note that these pancakes are relatively sweet.

SO HOW'D IT GO?

Note: I don't have a crepe pan. I used a frying pan, how I usually make pancakes. Don't know how that might affect my results.

These weren't bad. I did initially have the same problem as sugarkitty. They turned out just like heated batter, held together only by the crispy outer shell. I tried making them very small and very thin to counteract this, but it didn't work. HOWEVER, after I added an additional 3 handfuls or so of flour, they became something much better resembling pancakes. They still had gooey parts, but that gooeyness was more like extra-moist parts than straight up, warmed-batter parts. These had really nice flavor. I think next time I make these, I'll add a bunch more flour, a little less coconut milk, some butter, baking soda, and maybe a little water.

Maybe you were cooking too big of pancakes, sugarkitty.  Just a thought.
