Maggie's Yummy Roasted Beets
6 to 8 beets
walnuts, to taste
2 apples, sliced
2 teaspoons lemon juice
1 teaspoon brown sugar
3 tablespoons maple syrup
2 tablespoons balsamic vinegar
2 tablespoons olive oil
1/16 teaspoon (pinch) cinnamon
1/16 teaspoon (pinch) salt
1. Preheat oven to 400 degrees F. If the beets have stems, cut them off 2" from the beet. Rinse beets, place in a baking dish, and cover with aluminum foil. Bake for 60 to 75 minutes, or until beets are tender and easily pierced with a fork. The baking time will depend on the size and number of beets. Let cool. When cool enough to handle, peel away the skin and stem. Coarsely chop.
2. Roast walnuts in the oven, until nice and toasted. Place chopped beets and sliced apples in a bowl. Stir in the lemon juice and the brown sugar.
3. In a separate dish prepare the dressing by mixing maple syrup, balsamic vinegar, olive oil, cinnamon, and salt.
4. Pour the dressing over the beets and apples and mix well. Top with walnuts. Let sit for one hour if you can. Enjoy! (The dressing can be doubled if you like lots of dressing. I like it lightly dressed.)
