Mabo Dofu (Chinese Marble Tofu)

What you need: 

2 tablespoons of spicy black bean sauce
1 tablespoon of soy sauce
1 tablespoon of brown sugar
1 tablespoon of 807]cornstarch
1 medium onion
1 handful of scallions
1 block of firm tofu, cubed
1 cup of water
white rice

What you do: 

Slice the onion and sauté in a bit of oil. Add the black bean paste, soy sauce, sugar, water, tofu, and scallions. Then add the cornstarch in a bit of water to thicken. Serve over white rice.
Play with the measurements, if you like it spicy add more black bean paste.

SO HOW'D IT GO?

Instead of black bean sauce, I used jarred fermented black beans. Their flavor is pretty strong, but it worked out here. Somewhat salty, spicy, and doesn't have a ton of sauce unlike some mabo tofus that are practically like soup. We liked it.
