Lucuma-Chip Ice Cream
1 tablespoon agar agar flakes
1/3 cup water
1/4 cup lucuma powder
1/4 cup + 1 tablespoon agave nectar
3/4 teaspoon vanilla extract
1 (14 ounce) can full fat coconut milk
pinch salt
handful sweet cacao nibs
1. Combine agar agar flakes and water in a small saucepan. Heat on low (simmer) until flakes dissolve and turns water jelly-like.
2. Combine agar jelly, lucuma, agave, vanilla, coconut milk, and salt. Chill in fridge until cold.
3. Put into ice cream maker, and make ice cream according to machine directions. Put nibs in at last minute.

Source of recipe: Lucuma! It's been on my wish list for some time. I'm always looking for alternative sweeteners since Jenn and I are super crazy sweet addicts. Lucuma is a persimmon-like fruit, in this case it's ground up into powder form for ease of use in recipes...such as ice cream! Actually Lucuma flavor ice cream is more popular in some countries than vanilla and chocolate. It tastes amazing. Jenn and I were skimming our previous recipes and we realized we seem over exaggerative sometimes, but this time I am being dead serious. If you haven't tried Lucuma yet, you must. It made the ice cream taste like caramel drizzle-maple butter, whoa. I don't care if this sounds cheesy: It was like a symphony of flavors in my mouth. lol
SO HOW'D IT GO?
I have a couple of questions about the recipe....could you use something like arrowroot or chia seeds in place of the agar? Also, is there a substitute for the lucuma? I can't find it anywhere! Thanks!
