Low Fat Banana Muffins

What you need: 

2 tablespoons white sugar
1 tablespoon egg replacer (Ener-G recommended)
1 teaspoon vanilla
1/2 cup nondairy milk (I use soy)
2-3 ripe bananas, mashed
1 1/2 cups wholemeal self rising flour
1/4 teaspoon baking soda

What you do: 

1. Preheat oven to 350 degrees F. Grease or line muffin pan. Beat all ingredients except the flour and soda.
2. When well beaten, sift the flour and soda into the mixture. Mix well, but don't overstir, as the less it is beaten the lighter the muffins will be.
3. Place in prepared muffin trays and bake 25-30 minutes.

I made this, but my pictures got accidentally deleted.
I made little mini muffins, because I know how fat free banana muffins can be mushy, and these were no exception. I used some baking powder as the egg replacer and between that and the soda, they tasted very bitter.
