For the Love of Squash Casserole

What you need: 

1/2 cup margarine
1 large vidalia onion, chopped
4 large ( or 6 small) yellow squash , sliced in thin rounds
20-30 vegan buttery style cracker rounds, crushed (like Ritz)
1 cup shredded vegan mozzarella cheese, divided
salt and pepper, to taste

What you do: 

1. Preheat oven to 375 degrees F. Put a large pot of water on to boil for squash. Melt the vegan margarine in a large saute pan over low heat, and saute onions until translucent.
2. Boil the sliced squash for about 2 minutes to soften, and then drain well. Add the softened squash to saute pan, and then add the crushed crackers and all but a small handful of the vegan cheese.
3. Mix well to coat all of the squash with the onions, crackers and vegan cheese. Salt and pepper, to taste.
4. Put mixture in casserole dish that seems appropriate, and top with the remaining vegan cheese. Bake for 30 minutes or until sides are bubbly.
This is my husband's favorite comfort food.

This was good, but I'm not used to eating like that. All the butter and cheese. I feel I don't think I will make this again.


I had this last night too! My husband doesn't like squash either..but he did love this!  So much for leftovers here. Great, easy recipe!! :)


Also, I'm glad my husband doesn't like squash because I got to eat this as leftovers all week without having to fight over it!  The people at my church potluck had no idea it was vegan.  I used Follow Your Heart brand vegan cheese - I think mozzarella flavor.


I can't believe how much I LOVED this!  I barely had enough vegan cheese to shred on top, so there was none in the casserole itself, but I loved it anyway.  I used fat-free saltine crackers & Earth Balance.  I don't even remember if I added salt.  The crackers & the Earth Balance had salt, so it didn't need much if any.


i really liked this recipe! i roasted the squash instead of boiling them, it was longer to make but roasting (in a little olive oil) adds a ton of flavor. delicious, orange and heart-warming!


Ohhh, I can't wait to try this.  I have a bunch of acorn squash from my garden that needs to be eaten up.  I have been trying to figure out what to do with it, I think I will try this recipe with it.  I also have a bunch of onions from the garden too.  Will update later and tell how it turned out.


This recipe is SO delicious!  I only ended up using 3 medium squash, which made 3 large servings.  I replaced the margarine with olive oil and used almost an entire package of Ritz (30 crackers).  And I got by with about a half block of vegan cheese.  By my calculations, this meal cost me less than $2 a serving.

I will definitely make this again.  Super simple and easy, and very delicious!  Thanks for posting!


Just tried this recipe today and boy is it good!  I followed the recipe exactly.


I loved this!! I used whole wheat ritz crackers and less onion. Yummy  :)>>>


Made this last night and it was fabulous as well as easy to make. Though I added more cheese because that's how I like it.
