Life Enchanting Lentil Soup

What you need: 

6 cups + 1/4 cup vegetable broth, divided
5 celery stalks, cut into 1/2 inch pieces
2 onions, chopped
1 red bell pepper, chopped
4 cloves garlic, minced
6 cups water
2 cups RED LENTILS (I have tried yellow split peas, brown lentils, they suck so please use these)
1/4 cup brown rice
1 tablespoon lemon pepper
1 teaspoon garlic salt
1 teaspoon marjoram
1 teaspoon pepper
1 teaspoon sage
1/2 teaspoon cumin
1/2 teaspoon curry powder
1 tablespoon lemon juice

What you do: 

1. In a LARGE soup pot, pile in 1/4 cup veggie broth (for low-fat sauteing) and chopped veggies (celery, onions, bell pepper, and garlic). Cook for 5 minutes stirring occasionally.
2. Add 6 cups veggie broth and the water. Stir in lentils and rice. Cover and bring to a boil. Reduce heat to simmer, stirring occasionally for 25 about minutes.
3. Stir in the remaining ingredients EXCEPT THE LEMON JUICE (lemon pepper, garlic salt, marjoram, pepper, sage, cumin, and curry powder). Simmer uncovered for about 20 minutes, ir until the lentils fall apart and the mixture thickens.
4. Stir in lemon juice.
5. Ladle into soup bowls and get your mack on.

Source of recipe: I got this recipe from my mom. She was given this recipe from someone at church. I can't find the recipe anywhere online so I am posting it here cause it is so awesome <3. I have modified it a bit to use dried herbs instead of fresh cause that's how I roll.

SO HOW'D IT GO?

I just made this soup with (gasp) brown lentils, and guess what?  STILL delicious.  I suppose it would be yummier with red lentils, but didn't have any on hand, so I gambled and it paid of well.  Very delicious and makes a good portion for many a nights.  I didn't soak my lentils at all, but brough it to a boil and then let it simmer for the 25 minutes (which on my stove, is the second notch - low, sim, 3, 4, med, 6, 7, 8, hi), and it allowed for my lentils to stay intact and look pretty without being chewy at all.

This is amazing. It turned out a bit thicker than I was expecting, but really good. The spices are perfect. More filling than other lentil soups I have tried too.

i am no lentil expert but i think they disinegrate if you cook them or boil them too long so maybe that's the thicker soup deal... i suck at cooking lentils and mine usually turns out thick whereas maybe fullofbeans is more of an expert cause her pic looks more soupy :)

A delightful recipe!  Thank you Amymylove! I followed the recipe exactly (except I soaked the lentils first to reduce un-lady-like effects) and it was DELISH!

YUM! This soup is awesome! Seriously, this is one of my new favorites. I made a few variations to the recipe based on items that I had on hand. I added carrots because I wanted to. I used quinoa instead of the rice. I don't keep curry powder anymore since the last few times we used it it made us sick. I was also out of ground cumin. So I made my own curry with some turmeric, cumin seeds, fennel seeds, and a little ginger. Sauteed them for a second and then added to the soup when it was time. I also added two cinnamon sticks, two bay leaves, and some coriander. The result is incredible! It made eight generous portions, some will be used for lunch this week, the rest has been frozen for later use (think cold winter nights ;)). AWWW YEAH.

Great soup! You need to make it right now! :D

All I have right now are brown lentils and since those apparently suck, I'll be making this soup next chance I get to grab some red lentils.  I can't wait to be enchanted!

Very awesome indeed.
Only change I made was to add a dash of dried hot peppers.

Yum.  I was super hungry and low energy today because I did not eat. This soup is perfect.
