Lentils and Sweet Potato Stew

What you need: 

2 tablespoons oil
1 medium onion, chopped
2 medium carrots, peeled and chopped
2 celery sticks, chopped
1 bay leaf
1 garlic clove, minced
2 cups lentils
2 sweet potatoes, peeled and chopped
1 1/2 teaspoons curry powder
1 pound frozen cut green beans
1 - 14 ounce can diced tomatoes with juice
1/2 cup cilantro
Salt and pepper

What you do: 

1) In a large saucepan, heat oil over medium high. Add onions, carrots, celery, and bay leaf. Cook and stir until vegetables are softened. Add garlic and curry powder. Cook for about 1 more minute.
2) Add 7 cups of water and lentils. Bring to a boil, reduce to simmer, cover and cook for 10 minutes. Add potatoes and continue to cook uncovered, about 15 minutes.
3) Add green beans and tomatoes with juice. Cook until warmed through. Remove bay leaf. Add cilantro and salt and pepper to taste!!
Source of recipe: I was trying to figure out what to do with some of the sweet potatoes before they went bad :)
