Lentil Sour Soup

What you need: 

2c lentils
6c water
1c potatoes, diced
1/2c onion, diced
3T garlic
2T olive oil
1t cumin
1t thyme
1c swiss chard or beet greens
1/3c lemon juice
zest of 1 lemon and salt to taste

What you do: 

Wash lentils and put in large pot with water, potatoes,onions, garlic, oil and spices. Bring to a boil and then reduce heat to a simmer for 30 minutes. Skim off foam and add more water if needed. Stir in chard, lemon juice, zest and salt. Simmer until chard wilts.

SO HOW'D IT GO?

I'm pretty sure this is a recipe from Vegetarian Times Magazine article published at least a decade ago. Though fitting, the name given to this recipe is not the one in the magazine. Either way it is mighty tasty and most excellent when paired with zaatar/zatar/za'atar bread.
