Lemony Greek Potatoes

What you need: 

1/4 cup olive oil
1/4 cup lemon juice
1/2 teaspoon lemon zest, optional
1/2 cup water
1-2 teaspoons oregano
salt, to taste
2-4 gloves garlic, crushed
6-8 potatoes, peeled and halved or quartered

What you do: 

1. Preheat oven to 350 degrees F. Combine oil, lemon juice, zest, water, oregano, salt, and garlic in shallow baking dish.
2. Put potatoes in dish and turn to coat with oil mixture.
3. Bake for 1 1/4 to 1 1/2 hours, until all the liquid is absorbed and the potatoes are browned.

SO HOW'D IT GO?

OH YEAH. These are good. Must make them again and take a photo. Don't use too much water or they'll never get nice and browny.
