Laura's Strawberry Snack Cake
1 3/4 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon vanilla extract
1/3 to 1/2 cup plain, unsweetened applesauce (I use the "snack cups")
1 tablespoon canola oil
1 to 2 tablespoons freshly squeezed lemon juice (optional)
1 pint strawberries, sliced
1) Preheat oven to 350 degrees Fahrenheit. Lightly oil or spray and 8"x8" cake pan.
2) Mix the flour, baking soda, baking powder and salt in a large bowl. In a separate bowl, mix vanilla extract, applesauce, canola oil, and lemon juice (if using). Once mixed individual, combine the dry and wet bowls and stir well.
3) Pour into cake pan. Bake for about 30 minutes, until a toothpick comes out clean. Remove and let cake cool before slicing. Serve garnished with strawberries.
Serve warm or chilled, on its own or with vegan vanilla ice cream, or even for breakfast. Yum!
Source of recipe: I had so many strawberries that needed to be used for something, and this cake was the result. I came up with this by combining a couple of recipes and playing around with things a bit. Turned out pretty well!
SO HOW'D IT GO?
I made this yesterday, and basically followed the recipe to a tee. I found that there wasn't enough wet ingredients, and that when mixed with dry ingredients, it was just flour-y, and not batter-like so I added a bit of water and it was fine. I used a mix of whole wheat and all purpose flour. I also added a bit of equal sweetener. Despite this, it came out more bread-like rather than cake-like. Regardless it was delicious with the strawberries. Thanks.
