Kate's Hot Heavenly Banana Bake

What you need: 

2 to 3 soft bananas, almost to the point of browning
2 tablespoons creamy nut butter or tahini
1 tablespoon vegan butter or coconut oil
1 tablespoon agave nectar or maple syrup
1 tablespoon carob or cocoa powder, optional
1/4 teaspoon cinnamon, optional
handful coconut flakes

What you do: 

1. Preheat oven to 350 degrees F. Mash up the bananas with a fork. Add the nut butter, oil, and sweetener.
2. Add the carob/cocoa powder if you want it chocolaty, and the cinnamon if you want it spicy. Mix ingredients into mashed banana until distributed evenly.
3. Divide gooey mixture into 1 serving glass custard bowls, or pour into one big shallow glass pan. Sprinkle top with coconut flakes.
4. Bake for about 10 minutes, or until coconut flakes start to brown. Devour immediately!
If you choose to divide the mixture into the 1 serving glass custard bowls, you can store them in the fridge and just pop one into the oven for a quick sweet treat.

SO HOW'D IT GO?

I thought this recipe was o.k.  I needed to use up some  bananas.  I used all of the ingredients including  the cocoa powder and cinnamon.  I also added walnuts to 1/2 of the recipe.  I think it would have been excellent w/vanilla ice cream (which I don't have on hand).  Very easy recipe though.

hmmm I added everything on the list including the maple syrup and cinnamon.  I couldn't taste the cinnamon and it wasn't very sweet either.  I topped w/ coconut and usually love coconut on anything, but not on this.  I also love bananas, chocolate & peanut butter together or separate, but I don't know, something is making me sick.  It doesn't really make sense I've eaten chocolate peanut butter and bananas together before with no problem its usually yummy.  While eating this I started getting a strong feeling of throwing up.  I don't know why this would cause me to be sick but I guess my stomach just does not like it.  I'm drinking ginger tea now to try and calm my stomach. :-\  oh well the recipe sounded great I guess its just not for me.

This is such a great and EASY recipe! I used bananas, peanut butter and cocoa powder. My parents loved it too! I put all the ingredients in a blender so it was smooth and creamy, kind of like a baked custard. I bet, if you made a larger amount of the stuff, you could put it in a pie crust and it would taste really good (healthier then cheesecake or many other pie fillings too)! Maybe I'll try that next time, but it's great on it's own as is.

YUM!  God this was good.  I was craving something gooey and sweet and this was perfect.  I used 3 very ripe bananas, about 1/3 cup natural peanut butter and about the same of dark chocolate chips.  Just stirred and baked until it was bubbly and then pigged out.  I recommend the natural peanut butter because it stayed kind of thick and in a swirl rather than being overly soft and melting into the bananas completely like the processed kind.  I also topped this with some unsalted dry roasted peanuts for texture.  Thanks for the delicious and healthy recipe.

I used 3 bananas, peanut butter, cocoa powder, cinnamon, no oil, and no sweetener. The bananas make it plenty sweet. The peanut butter and cocoa compliment each other. Good recipe!
