Kasha Varnishkes

What you need: 

1 cup uncooked kasha
2 cups uncooked flat wide noodles
1 onion chopped
2 pieces of garlic
1 cup water + 1 cup vegetable broth (or use two veggie bouillon cube in 2 cups water)
4 tablespoons of "sour cream" substitute
2 cups cabbage cut into big chunks
soy butter
salt, pepper, dill to taste

What you do: 

Cook noodles according to package, Drain. Mix with a bit of butter and set aside.
While the noodles are cooking saute the garlic and onion in about 2 tablespoons soy butter. Add salt and pepper. Cook for about 5 minutes.
Add water + broth mixture and kasha and bring to a boil, reduce heat to a strong simmer and cook for about 15 minutes until kasha is soft.
It will absorb all the water, but will still be kind of wet. Mix in noodles and sour cream, top with dill.
Easy and warm for a cold bitter day.... Eat with pickles :)

SO HOW'D IT GO?

what can you use instead of sour cream alternative... nothing here like that, which is vegan.... And i never used to eat it...

Ahhhhh! after you saute the onion and garlic add the cabbage bits and cook for about 5 minutes also...oops
