Kale-ognese Pasta
1 pound dry pasta
2 tablespoons olive oil
1 onion
3 cloves garlic
1 bunch green kale
Salt and pepper, to taste
4 cups prepared pasta sauce
1 tomato, diced
1) Bring a large pot of water to a boil and cook pasta according to package instructions. As the pasta cooks, prepare the sauce.
2) In a medium sauce pan, bring olive oil to temperature over medium heat. Finely chop onion and garlic and add to pan, cooking for approximately 5 minutes or until soft. Finely chop the kale and add to pot. Add salt and pepper to taste and cook for five minutes to soften kale. Next, add pasta sauce and bring mixture to a boil. Once boiling, reduce heat and bring to a simmer.
3) Add diced tomato to sauce and combine with drained pasta. Enjoy! Serve with a sprinkle of nutritional yeast or vegan parmesan. Also good with mushrooms or vegan sausages added.
