Kale & Brown Rice with Kick!
What you need:
1 cup brown rice
2 1/4 cups water
1 tablespoon garlic, minced
1 tablespoon ginger, minced
1 tablespoon chili, minced
1 bunch kale, stems removed, chopped
1-2 tablespoons soy sauce
1 teaspoon hot oil or olive oil
6 cloves garlic, chopped
What you do:
1. First, start the rice. Combine the brown rice, water, garlic, ginger, and chili.
2. Bring to a boil, then lower heat to a simmer and cook for 35-40 minutes.
3. Meanwhile, steam the kale first in a tiny bit of water, when the water evaporates, add the oil, soy sauce, and chopped garlic. Stir fry until the kale and garlic are tender.
Serve either with kale on top of a rice bed, or mix it together! I made this up today, and it makes an awesome and filling (and nutritional) lunch.

SO HOW'D IT GO?
So, I made a weird version of this, but I enjoyed it very much...
I was bored with the initial version - just fine on its own, but I was trying to make it a complete meal, so I started adding random stuff I had in the fridge...
I added 2 tomatoes, onions, and pinto beans, all topped with a plentiful squirt of sriracha....not bad for a miscellaneous meal!
This is delicious! And also pretty easy to make. It is a new favorite!
I had never tried kale before and was looking for an easy and tasty alternative to steaming. WOW, delicious! I will definitely be making this again soon!
This makes a great lunch to take to work, and it freezes well in single-serve containers.
