Kale and Seaweed Salad

What you need: 

1/2 cup dried arame (sea vegetable)
2 tablespoons toasted sesame oil, divided
1 tablespoon minced garlic
1 tablespoon peeled and minced ginger
1 bunch kale, chopped
3 tablespoons soy sauce
1 tablespoon toasted sesame seeds

What you do: 

1. Rinse arame and place in a bowl. Cover with water and let soak for 5-7 minutes. Heat 2 teaspoons oil in skillet. Add garlic and saute for about 1 minute.
2. Add ginger and seaweed, and saute for another minute or 2. Remove and place into bowl.
3. Heat 1 tablespoon oil in skillet. Add kale and soy sauce. Cook until wilted (about 5-10 minutes). Mix all in bowl.
4. Top with sesame seeds and add extra soy sauce, if desired.
I was diagnosed with hypothyroid and started eating more seaweed because of its iodine content. This recipe is one of the tastiest I've found and the kale makes it so healthy! It might be good with some red pepper flakes, although I've yet to try it that way.
Source of recipe: I'm not sure...I had it in my collection. It may have came from a Bragg's cookbook. Regardless, I have modified it.
