Insanely Quick Creamy Chickpea/Coconut Curry

What you need: 

1 onion, diced
4 cloves garlic, minced
1 red pepper, chopped
1 carrot, chopped
1 tablespoon olive oil
handful cherry tomatoes, or 1 medium tomato, chopped
2 cups chickpeas, drained
1 baked/cooked sweet potato
1 (15 ounce) can coconut milk
1 to 3 tablespoons hot curry powder
1 tablespoon turmeric
1 large bunch cilantro, chopped
1 to 2 teaspoons sea salt
black pepper and salt, to taste

What you do: 

1. Sauté the onion, garlic, red pepper, and carrot in the olive oil on medium high heat, until fragrant and onion is transparent. Add the cherry tomatoes, and cook a few minutes longer.
2. Add chickpeas, sweet potato, coconut milk, curry powder, turmeric, salt, cilantro, and black pepper.
3. Let simmer and bubble for about 10 to 15 minutes. Season with salt, and adjust to taste.
Serve over brown rice. Extremely fast, and nourishing supper! Yummy too!

SO HOW'D IT GO?

Yummy!  I made this for a potluck tonight which included both veggies and non-veggies and it was a huge hit!  I was told nby more than one person it was the best curry they'd ever had.  I added some cauliflower to mine and used both regular curry powder (mine's not hot) and added some red Thai chili spice.  Will definitely make this again!

Best Curry I have ever cooked, I didn't have cilantro and it still turned out great. I think I will have to get a biggerr saute pan because mine almost overflowed.

I'm making this right now and whoo doggie, i made mine a little too spicy and a little too salty, but that's no big deal, the rice will balance it out. I used this recipe as a base and just used what i had in the house: carrots, onions, garlic,chickpeas, curry powder, cayenne pepper, salt, pepper and coconut milk. I'm making a batch of jasmine rice in my cooker right now and i'm super looking forward to a creamy curry meal!

Oh my gosh, so good! I may have added too many cans of garbanzos - I nearly overflowed my sautee pan - but leftovers are always welcome in my house, so it worked. I served it over brown rice for dinner (yumm!) and used the leftovers to make samosas the next day (extra yumm!!!) I would probably leave out the tomatoes, but that's more of a personal preference thing - I prefer my tomatoes in sauce form more than anything else. Excellent recipe - I'll definitely be making this again!

I hadn't made this in a while, and I forgot how good it is.  It's definitely worth running to the store for the cilantro.

OH MY GOD. this was fantastic! My non-veg boyfriend totally ate it up!  :) I didn't have tumeric on hand but i added A LOT of cumin and a little bit of allspice. The allspice complimented the sweet potato perfectly, i'll probably add another sweet potato next time. Also, after bubbling on med head for 15 minutes i simmered on low for 10-15 more minutes, it helped the curry thicken.

omg, this is so good!  to make it quicker, I bought a jar of roasted red peppers and cut them up, used a can of diced tomatoes and cooked my sweet potato in the microwave.  I added mushrooms just because I had some to use up.  Oh, and I put my cilantro in my mini food processor, which is alot faster.  I will make this all the time!

This was delicious--my boyfriend gobbled it up! I didn't have a sweet potato, so I used some acorn squash instead. I also didn't have any cilantro, and I'm sure it would have been even better with it. I'll definitely be making this again!

This is a super FRESH and delish version of a veggie curry!! We had it over quinoa and it disappeared. I more than doubled the recipe for my big fam and some company we had. Let's just say there wasn't much conversation because everyone was too busy shoveling it in  ;)b  I think I like the crock pot idea. I'm going to give this a shot during my school week routine as I soooo dig anything I can throw in the crock in the morning for the hungry minion to eat for dinner. I do have to agree it's not super duper quick but totally worth it.

I agree with the posts above - with all the cutting it is not that quick BUT BUT BUT it is truly awesome! I was working and trying to prepare a veggie dish for a baby shower I was attending so I just threw everything in a crockpot and let it cook longer than the directions say but it came out EXCELLENNNNNNT! The meateaters who did try it were like, wow you need to come cook for me! I just threw all the ingredients in the crock and let it cook on low for a bit of time. I added some veggie broth and got lazy on cutting that hard s.potatoe so i just did half. I also threw in some apples to be different!
