Indian Bean and Potato Thing
2 tablespoons vegetable oil
1 medium yellow or sweet onion, chopped
1 or 2 tomatoes
2 (15 ounce) cans garbanzo beans
1 tablespoon garlic powder
1 1/2 teaspoons salt
1/8 teaspoon ground black pepper
1 potato, peeled and chopped
1/4 teaspoon red pepper, optional
1/2 teaspoon cumin
1 teaspoon chili powder, optional
1. Fry the onion in oil until slightly brown. Add tomatoes, garbanzo beans (and two cans full of water), garlic powder, salt, and black pepper to pot on medium high heat.
2. Let cook for 20 minutes. Add potato. Let cook for another 20-25 minutes.
3. Add red pepper, cumin, and chili powder, if using. Reduce heat to medium low and cook for another 5-7 minutes.
Ideally, the final product should be a very thick mixture and not runny at all. If it is, drain some of the water. Serve with rice and vegan pita bread or tortilla.
SO HOW'D IT GO?
Yep I just doubled this recipe, added as much curry powder as cumin and it turned out great! I did substitute a little jalapeno pepper for the spicy powders and I think that made it good too.

I had never made Indian before so I tried this recipe along with a couple others from this website. This one turned out, by far, the best. It was easy and very good. I will definitely be making it again! :D

To be honest with you, this dish has become a staple in my house. I would have to say I make it at least once a week. I LOVE indian food, and my whole family, (carnivores and all) really love it. Great recipe! Thanks so much!
This was pretty good. I added thin-cut carrot coins, and halved the additional water. Still, it came out more watery and thinner than I imagined, but once I mixed it with rice and some of it soaked into the rice, everything was great. I probably won't add any additional water next time I make this, and see how it comes out. Definitely a satisfying dinner either way.
I made a few changes, but this was really good! I used canned basil tomatoes, I didn't measure anything, and I added A LOT of curry powder. I fried the onion, added tomatoes, and beans...and everything else. I cooked the potatoes with everything and let them cook down to make the sauce thicker. I like having some sauce. I served it over turmeric brown rice and with a tofu dish.
I fried up the onion and then added everything to the pot, including the potatoes and some curry powder. Just before serving I added chopped cilantro and served it up with brown rice, dosas, and some mango pickle. Delicious and super easy! I was going to take a picture, but it was gone before I could!
I added garlic slices. Delicious!
