Hawaiian Haystacks

What you need: 

your favorite steamed or boiled rice, or leftover rice
your favorite chicken and gravy substitute
sliced celery
chopped tomato
chopped red bell pepper
chopped scallions
shredded coconut
slivered almonds
pineapple chunks
shredded soy cheese if desired
Chinese-style crunchy noodles for topping

What you do: 

Heat your favorite chicken and gravy substitute (I have used cubed fried tofu for "chicken" and Kosher Pareve "chicken" bouillon mixed with soymilk, sage and some cornstarch for gravy - but I've also used packaged seitan in it's own gravy)
Heat or Prepare rice as package directs -or microwave leftover from fridge.
Arrange other ingredients in little bowls (I like getting pre-chopped from the supermarket salad bar when in a hurry)
All dinners assemble their own by stacking the ingredients in the order listed, in the proportions they prefer (picky or allergic diners can omit things as they wish)
