Happy Vegan Chocolate Chip Cookies

What you need: 

2 cups unbleached flour
2 teaspoons baking powder
1/2 teaspoon salt
cinnamon, to taste, optional
handful vegan chocolate or carob chips
1 cup raw sugar (turbinado; sucanat works too, but sucks up a lot of the moisture)
1/2 cup canola or vegetable oil
1 teaspoon vanilla
1/4 cup water

What you do: 

1. Very important-make sure all ingredients are at room temperature. It will work if they're not at room temp but it works much better if they are. Also while your oven is pre-heating put the cookie sheets you are going to use on top of the oven so they get preheated as well. Preheat oven to 350 degrees F.
2. In a large bowl, mix together flour, baking powder, salt, and cinnamon. Stir in chips. Make a well in the center and set aside. In a medium size bowl, add together sugar and oil; mix well.
3. Add the vanilla and then add the water; mix well. Add the wet to the well in the dry. Mix it well but be careful not to overwork it. Add more chips if you need to.
4. Spoon onto ungreased cookie sheets. Put them in the oven. Bake for 5 minutes and then flip and rotate the sheets (top to bottom and 180 degree rotation). Bake another 4 minutes and check them. The cookies are done when they seem a little bit softer then you want them to be. They will harden up some as they cool. I usually go in 2 minute increments from here until they get to where I like them.
5. Take them out when they are done and move them to wire cooling racks. If they split or come apart when you try to remove them let them sit on the pan for 2 minutes before transferring them to the racks.
These cookies have come a long way, lots of time and tasting spent on getting them to where they are now. Vegans and non vegans love them. SO HOW'D IT GO?

ooh. I love these cookies. I've made them twice, once with a lot of cinnamon, and once with just a wee bit. Both times they turned out quite tasty.

When I cooked them, I use rice dream, and used about a 1/2 cup.

  I became a Vegan 6 months ago, and haven't had a chocolate chip cookie until today. Sooooooooooo Yummy!  I didn't let the first batch cool long enough and they fell apart, but I was warned in the recipe. Second batch  - perfect. They are very rich and I would definitely recommend this recipe.  Thanks for the treat! :D

These were fabulous.  At first I was worried because the batter was so dry....

My cookies came out thicker than I am used to but the overall flavor was awesome. 

They are very pretty cookies, too. The batter stays almost white even when cooked...usually my chocolate chip cookies turn very golden brown.

Wow! These cookies are sOoooooo Good and scrummy. They went perfectly with soy milk and made me feel all warm and fuzzy. I made them with dark molasses sugar as well and they are sorta fudgey and more adult. Yum! Thanks for sharing!

Great recipe!  These completely hit the spot.  Only qualm is that while mixing with said water/liquids it seemed a little dry, so I added soy milk into the mix.  Worked like a charm.  Mine cooked in 5 minutes!  Soft and crumbly like I like 'em!  Thanks.

These seemed to be a bit uncooked in the center, even though rest of cookie was perfect!
Maybe it's my oven?

Made these exactly as listed except I doubled the vanilla and used rice milk instead of water. I had to get in there and mix with my hands, and made cookie bars in an 8x8 dish. Had to cook for about 35 minutes. The end result was the best chocolate chip cookies I have ever had in my life. Better than Pillsbury. Definite keeper.

Hmm.. yummy, but really dry and after cooling, extremely hard. So they're like totally delicious rocks. Next time I'll try adding applesauce and more water to i, and also baking it less. But they're extremely awesome. Nobody I've given them to has given me less than a hand reaching for more. Even my friend, who counts it against her pride to ask for food, took three. THREE. Gosh.

Yeah, the trick is to take them out when they still look doughy and not fully baked. Then they'll be soft! :-)
