Grilled Asparagus

What you need: 

1/4-1/3 cup vegan mayo
2 tablespoons tamari, soy sauce or Bragg's aminos
2 tablespoons balsamic vinegar
1 tablespoon granulated garlic, or fresh, to taste
2 teaspoons dried basil leaf
2 teaspoons dried oregano leaf
1 pound asparagus, woody ends trimmed

What you do: 

1. Whisk together all ingredients except asparagus.
2. Toss asparagus in mixture, grill or broil until it is as done as you like it.
3. Toss grilled asparagus in remaining sauce, if desired.
You could also just grill asparagus with a bit of oil and then toss it, but I like the flavor of it grilled with the sauce. This is excellent on pretty much all grilled vegetables, or tempeh. Also makes a tasty salad dressing.

This is amazing!!!  I had two five year olds BEGGING for more asparagus.  One of which had told me before I started cooking that she definitely did not like asparagus ;)  Amazing recipe- thank you!  I grilled them with just veggie butter and then tossed in the sauce afterwards.  Dinner was this and red lentil and rice dahl with cauliflower and grilled mushrooms and the other side was vegan crustinis with fig and olive spread.  


Yum, yum, yum!


Highly recommended.

I broiled it for about 10 minutes (which I think is a couple minutes too long) and served it with veggie couscous. Dee-lish!

And I'm totally going to use this recipe -- sans asparagus -- as a salad dressing this summer.
