Gooey Summer Veggies

What you need: 

2 cups fresh corn
2 cups zucchini, sliced
2 large tomatoes, cut into chunks
2 cloves garlic, minced
1 teaspoon basil
1 cup silken tofu
salt and pepper, to taste

What you do: 

1. Bring 1/2 cup salted water to a boil in a saucepan and add the corn. Cook for 5 minutes.
2. Add the zucchini, tomatoes, garlic, and basil and cook for another 5 minutes.
3. Add the silken tofu last, stir and heat through. Season, to taste. Serve.
My kids love this, even though they say they don't like tomatoes or zucchini!
