Gnocchi with Garlic Butter
1/2 cup nondairy margarine (I use Vitalite)
2 garlic cloves, pressed
1 teaspoon basil
5 to 6 ounces prepared gnocchi (I use Trattoria Verdi)
1. Place margarine in a bowl. Add garlic, and mulch together with the back of a fork. Add basil and carry on mulching.
2. An alternative way of combining these ingredients, is to warm the margarine for 1-2 minutes in the microwave then stir in the garlic and basil. This way, you will have to pour the finished garlic butter over the gnocchi. You get more of a garlic coverage with this method.
3. Bring a pan of water to the boil and add gnocchi. Cook according to package directions. My package says 3 minutes, I cook for 5. Drain the water then transfer to a bowl.
4. Depending on how you made the garlic butter, either scoop small lumps and drop into various places to melt over the gnocchi, or pour the butter over the gnocchi.
I have tried salt with this recipe, and I am bit of a salt addict. Salt does not go well, even a pinch in the water when cooking the gnocchi. Stay well away!
Source of recipe: I wrote it. I needed something to go on gnocchi for a quick go-to meal and decided to throw together some garlic gloves and butter and voilà.
SO HOW'D IT GO?
Nice easy recipe but I always like to fry my gnocchi - it so delicious when it's brown and crispy on the outside and soft in the middle.
