General Tao's Tofu
1 (12 ounce) box firm tofu, in 1" cubes (frozen and thawed, if desired)
1 egg equivalent (e.g., EnerG Egg Replacer), prepared
3 tablespoons + 2 tablespoons water, divided
3/4 cup + 1 tablespoon cornstarch, divided
vegetable oil for frying + 3 tablespoons vegetable oil, divided
3 green onions, chopped
1 tablespoon minced ginger
1 tablespoon minced garlic
2/3 cup vegetable stock
1/4 cup granulated sugar
2 tablespoons soy sauce
1 tablespoon white vinegar
1 tablespoon sherry, optional
red pepper, to taste
steamed broccoli, to serve
1. Mix the egg replacer as specified on the box and add an additional 3 tablespoons water. Dip tofu in egg replacer mixture and coat completely. Sprinkle 3/4 cup cornstarch over tofu and coat completely. Watch out that the cornstarch doesn't clump up at the bottom of the bowl.
2. Heat oil in pan and fry tofu pieces until golden. Drain oil. Heat 3 tablespoons vegetable oil in pan on medium heat. Add green onions, ginger, and garlic; cook for about 2 minutes. Be careful not to burn garlic.
3. Add vegetable stock, sugar, soy sauce, vinegar, sherry, and red pepper.
4. Mix 2 tablespoons water with 1 tablespoon cornstarch and pour into mixture stirring well. Add fried tofu and coat evenly.
Serve immediately with steamed broccoli over your choice of rice.
SO HOW'D IT GO?
Well, my tofu was really really frozen, so I decided to make this with tempeh instead, and it came out really well. I was running low on a lot of the ingredients (and by "running low," I mean comepletely out of), but it still turned out delicious. I used Five Spice instead of ginger, white onions instead of green, no sherry, wine vinegar instead of white, and served it over white rice. I doubled the sauce too, so I get to have leftovers for lunch tomorrow...or later tonight :)

Just skip the egg replacer alltogether. Coat the tofu with cornstarch before frying (easiest way is to shake tofu in a ziploc with the cornstarch).

This was the first vegan recipe that I made since becoming vegan a little over 2 months ago. I've made plenty different recipes since and this was definitely one of my favorites! In fact I made it 2 days in a row and doubled the recipe the next day. Very delicious. I will definitely be making this again soon, the last time was over 2 months ago.
All I have to say is... WOW!
This is definitely the best recipe I've made in a long time. It tasted so authentic - it was sweet and yummy and didn't require any weird ingredients.
I made the recipe exactly as stated, except I didn't have fresh ginger on hand so I used powdered ginger and it still turned out great.
Ate it over brown rice with broccoli.

This was really good. I did as mentioned below and baked the tofu for around 40 minutes. It turned out really well and the texture of the tofu was very much the same as if I had fried it. The only issue I had was that I used chopped ginger from a jar that I bought at the grocery and it seemed to be more minced than chopped- regardless, the ginger taste definitely overpowered everything else. I used a yellow onion and added thing slices of carrot for some added color next to the broccoli. I'll be making this again for sure but I'll chop my own ginger from now on :)

WOW. This recipe is amazing. I'm so glad I read some reviews first and took people's advice when they said to double the sauce! I could drink the sauce. Mmm.

So I make this all the time now, it's one of my favorite recipes! I've learned though with any recipe where I have to coat something like tofu, I just turn it into a shake and bake. It saves so much time! I just put all the coating mixture into a giant ziplock bag, coat all my tofu or whatever it is then throw it in the bag. I toss all of it at once so I don't have to do it again. Works perfect everytime.
Loved this. I was always scared to try tofu but gave this a try and feel in love wiwth the tofu. this will stay in my recipie box ;)b
