Garlicky Black-Eyed Pea Spread
What you need:
1 cup canned or pre-cooked black-eyed peas
2 cloves garlic, minced and lightly sauteed in olive oil
1/2 teaspoon cumin
1/8 teaspoon ground red pepper
What you do:
Mash black-eyed peas with a fork. Add garlic, cumin and spices. Blend until combined. Add more spices, salt and pepper to taste. Use in sandwiches or as a dip for vegetables or chips.

SO HOW'D IT GO?
i added the olive oil & a bit of lemon juice
I also put it in a food processor.
now, its like hummus!
I also added some extra olive oil, some lemon juice and a little water to the mixture. Still ended up nice and pasty. Pretty good, like a hummus variety- black eyed peas instead of garbanzo beans. I would make this again!
