Garlic Soup

What you need: 

3 HEADS garlic
3 tablespoon olive oil
7.5 cups water
1/8 teaspoon saffron
pepper
3 slices whole-wheat bread, cubed
Olive oil
2 tablespoon finely chopped fresh parsley

What you do: 

Break garlic cloves from heads. In a small bowl, cover garlic cloves with boiling water. Let stand 3 mins. Peel. If cloves are big, cut in half.
In a large saucepan, heat 3 tbsp olive oil. Add garlic cloves. Cook 2 - 3 mins. Add water and saffron. Season with salt and pepper. Simmer 1 hr. Cool. In blender, process soup in batches until smooth.
In a medium skillet, fry vegan bread in olive oil until crisp and brown. Reheat soup. Pour in warm bowls. Top soup with croutons. Sprinkle with parsley.

SO HOW'D IT GO?

I have been looking for this version of garlic soup for a long time! Though this is more work  than my own version (http://vegweb.com/index.php?topic=12367.msg77532#msg77532), it brings back memories. My grandmother refused to touch anything with even a hint of garlic in it, because "It makes me belch." We made this soup one day before she arrived on an extended visit, fed it to her without telling her what it was, and she loved it!! Never a word about "belching" either. I can't wait to make this again!

I used 1  & 1/2 bulbs, sauted onions,and beans, after it was pureed.  I  didn't  miss the salt and pepper I forgot. My mouth is still exploding  :jamming: from the the tang of the garlic. Saffron  from a 2 $  sale came in handy.

My vegetarian boyfriend who normally won't eat anything I cook LOVED this soup! He has a really bad cold at the moment and really likes garlic and to my surprise he brought home a whole bag of garlic so I grabbed 3 heads and whipped up this soup quite easily. It is delicious and great for dipping with bread or sipping out of a mug when the weather is rainy like it is here at the moment.

This is absolutely delicious! I followed comments and added brown basmati rice and some steamed veges...YUM! So deliciously garlicky yet subtle...

This is one of the favorites in my house.  And the home-made croutons are the bomb!

This was good..It was more like a broth than a soup so i added in some frozen-thawed broccoli and it seemed to give it more depth. It had a very nice roasted garlic taste to it too. Overall it was pretty good.

I am shocked at how non-garlicky this soup is! I added some rice instead of croutons, and some red chili flakes. I also used fake chicken broth instead of water. It's definitely good, but surprisingly bland. I'm going to add some more chili flakes, and as funny as it sounds, I'm tempted to add garlic powder! I hope I feel back to normal tomorrow, and I don't scare off my patients w/ the garlic odor. Thanks for the recipe!!

I'm making this right now, I'm so excited!! It smells wonderful, and I'm hoping it'll kick this cold right out of me!! I'll officially review it later today.

I have made this soup plenty of times now and let me tell everyone that it comes out MUCH better with vegetable broth. On certain occasions I have added black beans, chickpeas, or carrots.

The soup was great, but how are the rest of you not completely stinking like I was?  I only had one bowl, and the next day, after showering, brushing, listerine-ing, etc, I stepped into a car with someone and they asked me if I smelled garlic.  THEY ASKED ME IF I SMELLED GARLIC!  The worst part is, I was completely unaware.  I get the feeling that others who have mentioned they didn't reek afterwards were also unaware of it.
It did make me feel better though - I was on the brink of a cold.  I recommed that this soup only be eaten when you are sick at home by yourself.
