Garden Greens Soup for Vitality

What you need: 

2 big handfuls arugula, spinach or chard
1 big leaf kale
1/4 red bell pepper, chopped
1 tablespoon onion
1 tablespoon dark miso
1 teaspoon nama shoyu
1 lemon wedge, juiced
pinch of salt
1/2 teaspoon cayenne (optional)
1 to 1 1/2 cups water

What you do: 

1) In your blender, blend the greens with a few splashes of water until smooth. Add the rest of the ingredients, blend until smooth. Top with extra red pepper and arugula and dash of cayenne.
Wake up in the morning and have clearer skin and more energy for that trail run! Enjoy!

SO HOW'D IT GO?

This looks good. I'm going to try it. Do you think it would be ok to use light Miso? I keep seeing dark miso in recipes. do you know when to use light or dark? is dark miso a raw thing?

The differences in color of miso (white, yellow, red, black) are a result of what the soybeans are fermented with (usually a rice or grain).  From what I have read, the darker the color, the stronger the taste.  If a recipe calls for a dark miso, you can usually just increase the amount of lighter miso for the same effect. 

This is definitely a recipe I will be trying!!

I think I should try to make a Garden Greens Soup for Vitality. It looks like its really delicious food. Maybe the dark miso is a raw but I am not really sure to that.
