I first made this recipe when I was a new vegan in 2006. I didn't like it, as I thought it had a tofu aftertaste. Now I have a toddler and thought I'd try again. I'm not sure if my tastebuds have changed, or if it is that I was using a different type of tofu...but I love it now! And so does my daughter. I added a big handful of spinach for good measure (I have a Vitamix, so I can get the greens smoothly blended), and no one was the wiser.

Very rich and delicious, and super easy, I didn't really measure anything, but the best thing is you don't need to (plus it gives you good reasons to eat spoonfuls of the pudding mixture for 'taste testing purposes' ;)) and it all only took me about 5 minutes.

These are really really good. I just made the strawberry version today. In response to one of the previous comments about freezing them in cups and it being icy-- these are really suited to be made in popsicle molds. When frozen that way they have the "right" popsicle texture. However I've made it as ice cream and you either have to use an ice cream maker or stir it a lot while freezing to decrease the iciness.
These are delicious! I'm so glad I can eat fudgesicles again!
