Fresh Grapefruit Sorbet

What you need: 

1 large pink grapefruit, segmented
1/2 cup water
1/2 cup raw sugar
2 cups organic grapefruit soda
1/4 teaspoon salt

What you do: 

1. To Prepare your Grapefruit segments: Cut the top and bottom off of the grapefruit so it sits flat on a cutting board. Cut the rind from the flesh, making sure that you are only taking of the white fleshy part of the rind and leaving the membranes intact. Then slowly cut next to the membrane skin casing and repeat this on the other side so you are only getting the juicy inner part of each segment.
2. Simple Syrup: In a medium saucepan over high heat, combine water and sugar; heat until sugar is completely dissolved, then remove from heat and set aside.
3. In a bowl, combine the soda, simple syrup, and salt, then add to your ice cream maker.
4. Place directly in the freezer and cover with wax paper or parchment paper. Half way through the freezing process, add the grapefruit segments and the juice that collected and continue to freeze. then enjoy!!
Source of recipe: I used this as a pallet cleanser after a spicy or highly spiced meal
