French Coconut Pie

What you need: 

1 cup silken tofu
1 stick vegan butter
2/3 cup light coconut milk
2 teaspoons vanilla extract
1 5.2 ounce can sweetened coconut
2 vegan pie shells, unbaked

What you do: 

Altered family recipe
Preheat oven to 300 degrees.
Blend tofu until smooth. Add next 4 ingredients, in order, and mix well. Evenly distribute mixture between two pie shells.
Place pie shells on one cookie sheet and bake on middle rack for approximately 35 minutes, or until pie shell is completely baked and brown. Cool completely before serving.

SO HOW'D IT GO?

this tastes great but the filling is hardly enough for two pies.  when i make something for the first time, i follow directions exactly.  i did and the filling bubbled and churned but never really appeared to set like i would expect from pie filling.  i was a bit hopeful when, because of the heat, it expanded somewhat; but as it cooled it deflated.  anyone else have these issues?

This sounds good. Is the can of sweetened coconut like coconut cream or shredded coconut or something else?
