Fluffy Coconut Waffles
2 cups oat flour
1 tablespoon baking powder
1/4 teaspoon salt
1 tablespoon sugar
1 banana
1 cup coconut milk (I used lite)
3/4 cup nondairy milk (I used rice)
1 teaspoon vanilla extract (can use coconut, if you have it)
1 tablespoon canola oil
1/3-1/2 cup shredded coconut
1. In a large bowl, mix together dry ingredients (except coconut). In a separate bowl, mash banana very well and add remaining wet ingredients to it. Add wet to dry and stir until just mixed. Fold in the coconut.
2. Let sit for at least 10 minutes, or it will be too runny! I often put mine in the fridge overnight. The consistency of the batter may change depending on the size of your banana, so add a little flour if it seems too loose or add more milk if it seems too stiff.
3. Pour batter into waffle maker and follow manufacturer's instructions.
SO HOW'D IT GO?
No, it's not very pronounced at all and it goes well with the tropical flavor of the coconut. If you just don't like banana, you can use 1/2 cup of applesauce instead (just make sure to cut down on other wet ingredients a tad)
Do you think I could use egg replacer instead? The recipe for Nutty Orange Wafflewiches appears to be of very similar compositon to this recipe; it uses egg replacer & it is really good (coconut flavour also)
Is the banana flavour obvious in these waffles?
