Fluffy Coconut Waffles

What you need: 

2 cups oat flour
1 tablespoon baking powder
1/4 teaspoon salt
1 tablespoon sugar
1 banana
1 cup coconut milk (I used lite)
3/4 cup nondairy milk (I used rice)
1 teaspoon vanilla extract (can use coconut, if you have it)
1 tablespoon canola oil
1/3-1/2 cup shredded coconut

What you do: 

1. In a large bowl, mix together dry ingredients (except coconut). In a separate bowl, mash banana very well and add remaining wet ingredients to it. Add wet to dry and stir until just mixed. Fold in the coconut.
2. Let sit for at least 10 minutes, or it will be too runny! I often put mine in the fridge overnight. The consistency of the batter may change depending on the size of your banana, so add a little flour if it seems too loose or add more milk if it seems too stiff.
3. Pour batter into waffle maker and follow manufacturer's instructions.

Sweetened coconut, or unsweetened? Cuz I have unsweetened, and I dont wanna mess em up  :-\

I made this and used to ripe bananas (love bananas) and I do drink dairy so used milk and this was so amazing! My boyfriend wants them everyday now. Thanks for this simple yet amazing recipe

I subbed the banana for half a cup of wet okara (the soybean pulp left after making soymilk), because I have tons of the stuff to get rid of on a daily basis. It turned out beautifully. Perfect waffles!

Is the banana flavour obvious in these waffles?

the banana flavor was VERY obvious when i made these waffles, completely overpowered the coconut flavor. I made these this weekend thinking it was like banh kep the vietnamese coconut waffles but they werent, maybe i'll have to modify it and find something to replace the banana.

other than that, this was AMAZING. they were still so soft and fluffy even a day after we just popped it into the toaster for a crunchy treat.

For my first waffle recipe, these were pretty good. Not fluffy, but hearty and tasty with a wonderful coconut flavor. I enjoyed these with Soy whip cream, banana and strawberry slices, chopped walnuts and maple syrup.

These were AMAZING! I blended oatmeal in my food processor to make the Oat Flour, and it was super easy and turned out great. I used vanilla soy milk and left the batter in the fridge overnight, unfortunately the batter was more of a dough consistency in the morning so next time I'll either use the batter right away or add some more milk. My picky 2 year old loved them. This recipe is definitely a keeper!

I ended up finding a coconut syrup.  Just made them and WOW!!!!  These are amazing!  Normally I'm a bottomless pit, and these really hit the spot.  Only variations: I used whole wheat pastry flour & plain light soy milk instead.
