Filling Burrito Filling

What you need: 

3/4 cup diced onion
3 tablespoons olive oil
1/2 cup diced zucchini
1/2 tablespoon lime juice
1 cup frozen veggie medley
1 teaspoon garlic powder
1/4 teaspoon cumin
1 can stewed tomatoes OR diced tomatoes with jalapeno
1 can lard-free refried beans
3 cups rice
vegan tortillas

What you do: 

1. Saute the onion and zucchini in the oil until onion is translucent.
2. Add the lime juice, veggies, spices, and tomatoes, and cook until the veggies have thawed.
3. Stir in the refried beans and cook until thoroughly heated through.
4. Stir in the rice.
5. Divide mixture into portions and wrap up in tortillas. Serve with salsa.

Very, very good!

I made some changes based on my preferences:

~a 10 oz pkg of spinach, instead of diced zucchini and frozen veggie mix
~2 cloves of garlic cooked with the onion, and no garlic powder
~the Ro-tel chopped tomatoes with peppers

I topped the burrito filling with guacomole and shredded lettuce for an excellent meal!
