Fast “Chicken” Pieces
small box of marinated tofu pieces (see recipe for more info)
"chicken" flavor seasoning
parmesan cheese (powdered type)
1-2 cloves of garlic
a touch of turmeric (optional)
olive oil (preferably spray)
I personally use the UK brand Cauldron Foods marinated tofu pieces which are already slightly crispy on the outside and are pre-marinated in soy sauce. (If some kind person would like to suggest a US-equivalent for our American veggie friends, that would be great :) If you can't find the right type of tofu, simply use one of the VegWeb baked tofu recipes. Obviously, this will add to the preparation time and these wont be 'Fast' anymore!
Very simple recipe:
1) Mince the garlic and fry in a little olive oil until light brown.
2) Add the tofu pieces and stir. Add a little “chicken” seasoning and mix until the tofu and garlic is well covered. For a little color, add about 1/2 to 1 teaspoon of turmeric.
3) Keep frying over a medium heat. Add enough vegan parmesan to lightly cover the tofu pieces (the vegan parmesan will turn brown in the pan). Keep frying. Do a taste test: add a little more of the seasoning/parmesan at this point if the taste isn't strong enough. Don't over-do it- especially if the seasoning is quite salty.
4) Serve!
Modifications: Add small amounts of one or more after step 2…nutritional yeast, chili powder, lemon juice, fresh rosemary, fresh thyme, coriander
