Extraordinary Barbecue Pizza
Pizza Dough:
3 cups flour, divided (I use 2 cups all purpose and 1 cup whole wheat)
1/2 teaspoon salt
1 tablespoon yeast
2 cups warm water
1 tablespoon olive oil Topping:
4 tablespoons barbecue sauce, as needed
1/2 zucchini, thinly sliced
1/2 granny smith apple, chopped
1 roma tomato, thinly sliced
1/2 green pepper, sliced thinly
1 (4 ounce) can olives
1/2-1 cup vegan cheese, optional
1. For the pizza dough, mix 2 cups flour, salt, and yeast. Mix warm water and olive oil. Slowly mix the water mixture into the flour mixture, stirring to get out the clumps. Gradually add the last cup flour as you knead it into a dough.
2. Knead the dough for 1-2 minutes. Place in a bowl and then cover with a damp cloth and leave it in a warm place to rise for 20 to 30 minutes. In the winter when it's colder, turn your oven on the lowest degree for a few minutes until it is warm inside, then put dough in there to rise. Be sure that it is not too hot to cook the dough.
3. Once the dough has risen a bit (not quite doubled), begin preparing the toppings and preheat the oven to 400 degrees F. Grease a cookie sheet or pizza pan.
4. Gently take the dough out of the bowl (do not punch down) and spread it out by balancing the dough on your fists. Place in prepared pan and spread it out until it is about 1/4" thick.
5. Spread on barbecue sauce (just enough for a thin layer on the dough). Add toppings and bake for about 20 minutes.
