Experimental Love Beans and Stuffasis
[u]Hot Love Spice Mix[/u]: (can used in all kinds of stuff)
1/2 teaspoon ground cumin
1/2 teaspoon cumin
1/2 teaspoon oregano leaves
1/2 teaspoon powder
1/2 teaspoon cayenne pepper
1/2 teaspoon freshly ground black pepper
1/2 teaspoon kosher salt 1 (15-ounce) can black beans, rinsed and drained
1 (15-ounce) can corn, juice reserved
1 (15-ounce) can hominy, juice reserved
1 tablespoon olive oil
1 tablespoon vegetable broth
1. Hot Love Spice Mix: Blend ingredients together. Adjust proportions to personal preference.
2. Love Beans: In a microwavable container, combine black beans, corn, and hominy. (Make sure the beans are rinsed good or the recipe will turn out sort of sloppy and purple tinted.)
3. Add Hot Love Spice Mix to taste, olive oil, and veggie broth. (In a pinch you can also use the reserve juices from the canned corn and hominy and a little oil.) Stir well.
4. Put a lid on the dish and microwave on high for 5 minutes - just long enough to get everything cooked and flavorful! (My microwave is weird and has setting for specific things so not sure on time, but I think 6-7 minutes on high?)
I took some of the mixture out before I cooked it and ate it for lunch the next day! Yummy....great with some spanish rice and salsa!
You could also add some tomatoes if you would like...just wait till towards the end of the cooking!

I love hominy but I never know what to put it in so this concoction was perfect! I added some halved cherry tomatoes and fresh cilantro and ate it with some tortilla chips making a lovely light dinner. Thanks for the quick, easy, and yummy recipe.
my vegan taco soup recipe uses hominy... i've never heard a complaint yet about this taco soup!

Oh man . . .I tried this on a whim today based on the other reccomendations . . .SO GOOD.
I don't have a microwave at home, so I used the stove. I sauteed some garlic in oil before adding the beans-corn-hominy mixture, and I added some left over quinoa as well. It was super tasty, super cheap, and super easy.
