Elotes
1 ear corn, in its husk
1 to 2 tablespoons vegan mayonnaise
1 teaspoon pico de gallo seasoning (Find it at a Mexican market or it might even be in the produce section of a grocery store if you're lucky)
1. Preheat oven to 375 degrees Fahrenheit. Once oven is ready, place corn, husk and all, right on the oven rack. Roast for 30 minutes, flipping over halfway through roasting.
2. Take corn out of the oven and peel off the husk. I used one hand to peel the husk and the other to hold the corn with an oven mitt since it's hot.
3. Cut off the corn's stem and stick a corn holder in the bottom. Slather on some vegan mayo with a butter knife and sprinkle with pico de gallo seasoning.
If you hate having corn all up in your grill like I do, cut the corn off the cob with a sharp knife and eat with a fork.

SO HOW'D IT GO?
I just found out from a coworker that you can also cook corn on the cob in the microwave. Just nuke it for 4 minutes on a microwave safe plate. I tried it today and it turned out just as good as it did in the oven.
