Easy Peasy Sloppy Joes

What you need: 

2 tablespoons olive oil
1 large white onion, chopped
4 ribs of celery, chopped
1 small can of green chilies
6 cloves of chopped/pressed garlic
1 cup tomato sauce
3 tablespoons tomato paste
1/2 cup ketchup
4 teaspoons Tabasco (or other hot sauce)
2-3 teaspoons vegetarian Worcestershire sauce (like Annie's)
1 cup textured soy protein

What you do: 

Heat the oil in a deep skillet (one with a lid would be good) on low. When warm, saute the onions and celery until soft. Add the garlic and green chilies and cook a few minutes longer.
Add the tomato sauce, tomato paste, ketchup, Tabasco and Worcestershire sauce. Cook until mixture bubbles. Turn to low and let it simmer for a few minutes.
Turn heat off.
Mix in textured soy protein and put the lid on. Let it sit for about 5 minutes to absorb liquid.
Serve on freshly toasted burger buns.

SO HOW'D IT GO?

Thank you, thank you, thank you! This is sooo awesome!  ;D I made some changes, due to lack of ingredients-  no celery or green chilies, no Worcestershire sauce , and only 4 cloves of garlic because 6 seemed like a lot. I also used only 1 instead of 4 teaspoons of Tabasco ( I use the green kind), just because I fear the spicy.  ;) But I think maybe another tsp would be good for me, because with the 1 tsp I can just barely taste it, but it does have a little kick. Definitely toast the buns, they're even better that way. I'm going to make this all the time! Thanks!

I make a similar version of these and add a teaspoon of fennel seeds. It livens up the taste...it's amazing!
