Easy Noodles n Veggie
spaghetti noodles, 1/2 box (boiled until tender, and drained)
broccoli (1 small, or a 1/2 frozen packet of pre-cut broccoli)
2-3 medium tomatoes, diced
1 zucchini (chopped howe'ver you want)
1 can corn (8 oz), drained
1 can peas (8 oz), drained
1 teaspoon veggie Parmesan cheese
1/4 cup cheddar vegan cheese
Boil broccoli until tender. Drain. Sauté zucchini while broccoli is boiling. Add corn and peas to the zucchini and sauté for 1-2 minutes.
In a casserole pan, layer the dish as follows:spaghetti (on bottom), 1/2 of the cheddar vegan cheese, the drained broccoli, all of the sautéed zucchini, peas and corn, the rest of the cheddar vegan cheese, and the parmesan vegan cheese.
Bake at 375 degrees Fahrenheit for 5 minutes.
