Easiest, Fullest Breakfast Pizza

What you need: 

1 whole wheat pita
2 1/2 tablespoons pizza sauce
1 teaspoon extra-virgin olive oil
2 tablespoon crumbled vegan sausages (I use Gimme Lean sausage)
1/4 pound firm tofu, crumbled
1/8 heaping teaspoon black salt
1/4 teaspoon turmeric
1/2 teaspoon yellow mustard
1 tablespoon minced yellow onion
1 tablespoon chopped green bell pepper
A small handful shredded frozen hash browns, thawed
Vegan cheese of choice, shredded

What you do: 

1) First, make the tofu and vegan sausage. Heat oil in a frying pan over medium heat, and cook vegan sausage until it starts to brown and saute for a minute or two. Crumble tofu into the same pan and add black salt, turmeric, and yellow mustard. Cook 4 to 5 minutes, until vegan sausage is browned and tofu is heated.
2) Spread pizza sauce onto the top of the pita, and top with the shredded vegan cheese. Add the onion and green bell pepper, tofu and vegan sausage mixture, and thawed potatoes.
3) Bake at 350 degrees Fahrenheit for 20 minutes, or until the pita gets crisp and hashbrowns are cooked.
Source of recipe: I had a craving for the breakfast pizza my mother made me when I was a kid, and improvised with ingredients I always have on hand.

SO HOW'D IT GO?

This is pretty easy to put together. I was a bit uncertain about the amount of cooking time, but nothing burned and the pita just got crispy. It's a bit messy to eat, but the fact that it's breakfast pizza more than makes up for it. I'm not normally one who can eat much for breakfast, and the size of this was just right. For the tomato sauce I used the Tomato Sauce with a Kick recipe from here, which works well as a pizza sauce. Next time I may leave out the potato, since I never usually have hash browns sitting around and grating a potato for one pizza is... work. Anyway, good stuff.
