Easiest Cupcakes on the Planet

What you need: 

1 small can of pumpkin
1 box of vegan yellow cake mix

What you do: 

Mix and divide into greased muffin tins (or use liners) and bake per the directions on the cake mix box.
If you prefer, you can just make this as a cake instead.
My husband moaned after each bite, that's how much he loved them. They are super moist and absolutely delicious!

SO HOW'D IT GO?

holy cow, this recipe is amazing! talk about the gooeyest, most moist cake ever! this is probably my new staple dessert.

i was pretty sceptical when i first started to mix the pumpkin into the mix, but once it was all mixed together, it was gooey & resembled cake batter made with milk & eggs!

i used a devil's food cake mix cause i wanted chocolate : ) i did add a few dashes of chocolate soy milk because i wanted a very gooey cake,  but i'm sure it'd be fine without it. and then i added some cinnamon and nutmeg cause it's november and i wanted autumn flavors (everyone's right, you can't taste the pumpkin at all).

oh, and at first i was a little sad because i didn't have the ingredients on hand to make an icing, but the top of the cake was brownie-like and i felt that it wasn't missing a thing. i will DEFINITELY be making this again soon to wow all doubting omnivores!

this turned out excellently.  i made a couple of substitutions; i used strawberry tofu filling instead of the pumpkin, and I used a pancake/waffle mix instead of cake, since i wanted to have this cake in the morning.  also, i used a bundt pan instead of cupcake tins.  it works best with a glaze of peach compote.

Oh. My. Gosh. These are the easiest and tastiest cupcakes/ cakes EVER!!! I make them way too often and I usually add about 3/4 of a cup of soy milk to the mixture and it comes out really smooth. I also add about a cup or so of chocolate chips (I love chocolate, can you tell?) into the mixture and the cupcakes end up coming out perfectly. Thanks so much for the wonderful recipe.

I agree with not knowing how I feel about these.
I used Devil's Food mix and while they look absolutely beautiful, they taste kinda weird.  I can't quite put my finger on it, but its a familiar taste....almost like one of those Devil's Food Snackwell cookies that my grandma like so much....
Perhaps with frosting they will be a little better.
Not like a normal cupcake, but still acceptable.

I'm not sure how I feel about this. I used yellow cake mix, a can of pumpkin, & some cinnamon applesauce with a dash of pumpkin pie spice and cinnamon. The batter tasted great but the finished product just wasn't sweet enough for me. I topped it with some vanilla frosting to satisfy my sweet tooth but it still just didn't do it for me. Others said they liked it. Maybe I'm just a sugar addict.

this was so simple and came out sooo good. my boyfriend and i made it and devoured the whole thing in less than 24 hours. we made an apple cider glaze for it too which just made it all the  more delicious.

I LOVE this recipe!  I've made these for years - WAY before becoming vegetarian.  This is an old Weight Watchers recipe.  Low fat, high fibre, low cal., tasty.  What more could you ask for!?! ;)b

Okay, I've made this now with yellow cake mix, and this is the best cake ever! Even better than it was with chocolate! I added neon green to the frosting, my fiance said it looked like a nuclear waste cake... but it tasted delicious! The cake/cupcakes (both come out PERFECT!) turn out so light and fluffy, they're not heavy or oily or anything.  Thanks again for a great recipe!
