Dreamy Cashew Mango Cream

What you need: 

1 cup raw cashews
1 lb. frozen mango chunks
water
2 tablespoons agave nectar or other sweetener
1/4 cup orange juice concentrate
1 teaspoon vanilla
1/2 teaspoon cinnamon
pinch of salt

What you do: 

1. Put cashews in Vita-Mix blender or food processor and pour in enough water to cover the nuts.
2. Blend.
3. While blending add agave nectar, orange juice concentrate, vanilla, salt, and cinnamon.
4. Add frozen mango a few chunks at a time. Wait for it to be blended and then add a few more. Continue adding mango until desired thickness is achieved. It should look like a mousse. If the blades won't turn, add a little more water. If the cashew cream isn't thick enough, add more cashews and continue blending.
The amounts given in the recipe are all estimates. Use more or less of whatever you want to get the taste and consistency that makes you smile and say "yum".
This is great layered with slices of your favorite fruit and sprinkled with raw wheat germ and coconut flakes.

SO HOW'D IT GO?

Yummy!  I soaked the cashews first to soften them up, used fresh oranges as didn't have concentrate, and a fresh mango instead of frozen so it was a little more liquid then described, added extra agave and also coconut milk!!
Froze it in ice cube trays and it's really fantastic when just a little bit melty.
I would soak your nuts overnight Animaluver, then they are smoother when blended.  Works when making cashew cheeze also:) Thanks for this recipe!!

Thanks so much! This was delicious. I originally froze mine in pops, but didn't enjoy the gritty texture from the cashews. Anyone else have that problem?  So I let it thaw out and ate it like ice cream.  very good!!!

This one tops the cake,  I had some changes No fresh squeezed  OJ on hand. So I used some fresh cored pineapple. It is a must try. Flavor is so out of this world.

This recipe is so good!  I had to change a couple things, just because of what I already had in my pantry.  I didn't have orange juice concentrate, so I used orange juice instead of water and frozen peaches instead of mangos.  And I left out the cinnamon, just because I forgot about it  :D .  This is definately a keeper!  Thank you for submitting this!

I'm thrilled people like this recipe!  I make it often, and now can't wait to try it with coconut milk instead of water.  Good idea, MYAVOCADO!

I used coconute milk in place of the water and, like another reviewer, used more sugar because the frozen mangoes weren't sweet enough. Love this recipe!

Tasty!  In the absence of orange concentrate, I used a bit of lime juice, and used maple syrup instead of agave.  I didn't have vanilla, which would doubtless make this even yummier, but the texture was delightful, as was the flavour.  I'll make this again, probably with a variety of fruits.  Thanks for reminding me of the creamy qualities of cashews, rosewood!

ps, 'Use more or less of whatever you want to get the taste and consistency that makes you smile and say "yum".' = best way ever to describe 'to taste'-style recipes.

This recipe is simply delicious.  For some reason, as soon as I read it, I knew I wanted to make popsicles.  A added an extra tbsp of agave nectar, because once things are frozen they usually don't taste quite as sweet.  The results were fantastically delicious.  I had a little extra that I used mixed with raspberries, and that was really good too.  I will make this again (and again and again). Thanks!
