Delicious Low-fat Whole Wheat Pancakes
1 cup + 2 tablespoons whole wheat flour
1 tablespoon brown sugar
1 1/2 teaspoons baking powder
pinch salt
2 tablespoons apple sauce
1 cup minus 2 tablespoons water or fat free nondairy milk (I use soy)
1/2 cup walnuts or blueberries, optional
1. Combine all dry ingredients, and mix together. Add apple sauce, water/nondairy milk, and mix until batter drips from spoon, but is not runny. If desired, mix in nuts or berries.
2. Heat griddle/frying pan and spray with cooking spray. Dip your finger in some water and flick it onto the surface of the pan. If it sizzles, it's time to fry up some yummy pancakes.
3. Ladle about 1/4 cup batter into the pan and let it cook until small bubbles form in the center and/or edges are cooked. Flip those babies over. Keep them warm in a preheated oven covered with a paper towel to keep the moisture in.

I've been using this recipe for a while, but haven't gotten around to reviewing until now. I cannot bring myself to try another recipe. These are low fat and delicious. Why stray?
My non-veg mom, who doesn't like pancakes, loved these! She couldn't stop raving about them.
Today, I added walnuts, cinnamon and vanilla.
These are SOSOSO GREAT! I added some lemon juice and LOTS of blueberries.

these are probably my new favorite pancakes! they're super fast and easy; usually pancakes take me a lot longer to make. they're so good though, and fluffy! my only problem when I make pancakes is that the middle is always still a little soggy...I guess I shouldn't make them so thick/I should cook them longer? I'll definitely be using this again :)
Can't stress how much I love these pancakes!!! This time I completely omitted the sugar and added a scoop of Organic Chocolate Riceotein. Came out great!!!! Slight chocolate flavor and lots of protein. :) thanks again for this recipe!
ive been trying to gain weight but still eat healthy... I made the recipe which should serve more than one person but ate it all... Very good and easy to make! Definitly should try.

I usually am an enormous failure when it comes to making pancakes, but these turned out great!
I halved the recipe and used whole wheat pastry flour and regular cane sugar instead of brown, then added in some vanilla, almonds, raisins, and cinnamon. I didn't have any milk left so I just used the water which I thought would make it not as good but it didn't really affect anything. I wish I had some fresh fruit on hand because this is the perfect recipe to build on. Oh well-next time!
i just made these pancakes for breakfast and they were marvellous!!! i substituted half a banana for the applesauce, though, because i had no applesauce. it was EVERYTHING you would want in your dream pancake - soft, fluffy, moist, delicious. i used a non-stick pan, and slapped some peanut butter on and drizzled maple syrup over. heavenly! thanks for the recipe!!! :D
