Crunchy Peanut Butter Balls
1 cup crunchy cereal, crushed
1 cup smooth peanut butter (for extra crunch, use 1/2 crunchy peanut butter)
1/2 cup powdered sugar
1 tablespoon vegan margarine
1 cup dark chocolate
2 teaspoons oil
20-30 whole peanuts, optional
1. Mix together cereal, peanut butter, sugar, and margarine. Using your hands (or a melon baller), form small balls out of this batter.
2. Place the balls into a lined container and freeze the container for at least 1 hour. Crumble the chocolate, and heat them with the oil in a double boiler until completely melted, stirring often.
3. Remove the chocolate from the heat and remove the balls from the freezer. Place 1 ball at a time into the chocolate. Using a spoon and a knife, cover each ball with chocolate, then remove the ball from the chocolate using the spoon.
4. Use the knife to scape off any remaining dripping chocolate before placing the ball back into the container that the ball was originally frozen in. If desired, place a whole peanut on each ball when they are still wet. Store the balls in the fridge.
If the balls begin to melt excessively upon contact with the hot chocolate, place them back into the freezer for 1/2 hour to freeze up again. The chocolate can also be reheated on a double boiler if necessary.

I know I already posted about these but I want to further endorse them by saying that I brought some to work once and now people request them. I sometimes get lazy and blob chocolate on top instead of dipping the PB balls. Thanks!
This was pretty good, actually, they were very addicting. However, full of sugar! Sooo much sugar! But if you're in the mood for something sweet, these do hit the spot.
I used cornflakes with it and all chunky peanut butter, It was a little dry ( Probably because of using all crunchy pb and no smooth :P ) But it turned out amazing. I also don't have a freezer so i put these just in the fridge overnight and they still turned out well. Thanks for the recipe, I'll add pictures soon!
My Mom used to make peanut butter balls when I was little so I was eager to try this recipe and relive the days of jungle gyms and class birthday parties. I used Erewhon brand crispy brown rice and natural crunchy PB and they came out smashingly. I'm experimenting to see how they do when kept at room temperature (in case I want to bring them to work). These would even make a good gift. I thought the proportions were perfect but I didn't crush the cereal. I think corn flakes would be good too. Thanks DalVeg!
Yes, I did use natural peanut butter. If you mix your PB well before making these, you should be fine.
