Creamy Coconut Mango Quinoa Breakfast

What you need: 

1/2 cup rinsed quinoa
1 mango, peeled and cubed
1 cup coconut milk
1 tablespoon cinnamon
1 teaspoon agave nectar

What you do: 

1) Warm coconut milk and cinnamon in a medium pot. Add quinoa and cook, covered, for about 25 minutes on low medium heat.
2) Before the quinoa absorbs all the coconut milk, add the mango and cook for 5 more minutes until it is fluffy. Drizzle agave nectar on top and enjoy your lovely yummy breakfast!

SO HOW'D IT GO?

Just tried this; I enjoyed it, but next time I might try using vanilla soymilk instead of the coconut milk.  Doesn't seem like it added much flavor, but it did add a lot of calories, even though I used "Lite."  Thank you for the recipe, I was looking for something to do with the quinoa  I bought; I''m a newbie!
