Creamy Coconut Beans and Rice

What you need: 

1 onion, diced
1 red pepper, diced
2 cloves garlic, minced
2 tablespoons oil (I use coconut oil)
1/4-1 teaspoon cayenne pepper, to taste
1/2 teaspoon marjoram
1/4 teaspoon oregano
3/4-1 teaspoon onion powder
3/4-1 teaspoon garlic powder
1 tablespoon hot sauce (I use Texas Pete Hot Sauce, for twang not heat)
1 (14 ounce) can coconut milk
2 (15 ounce) cans dark red kidney beans
1 (14 ounce) can diced tomatoes
salt and pepper, to taste
1/2 (10 ounce) package vegan monterey jack cheese, grated or chopped
(I use Follow your Heart Monterey Jack Cheese)

What you do: 

1. Cook onion, garlic, and red pepper in oil until just soft. Add all other ingredients (except the cheese).
2. Cook for 10-30 minutes until it begins to reduce a bit and thicken up some. Cooking time depends on the tomatoes added, some have more juice than others.
3. Add the cheese, and stir until melted. Taste for seasonings. Pour over rice or mix with rice before hand.

SO HOW'D IT GO?

This recipe is excellent. I added baked tofu, to make it a more substantial meal. I used black beans but think any variety of bean would be excellent. I served it with brown rice and it was a hit with vegans, veggies and carni's. I recommend adding a vinegar-based hot sauce to the final meal, I tend not to cook with hot spices because of childrens preferences, but a dash of Frank's Red Hot made the adult's meal complete.

This was seriously AWESOME!  I cooked a combo of pinto, red and black beans, probably close to 2 cans worth, and added green pepper too....SO GOOD!  I think I'm going to make a huge batch of it and freeze it so I can have it anytime I want.

This is seriously one of the best things I've ever tasted. Even my carnivorous boyfriend liked it. The only downside is it doesn't exactly inspire portion control. Oh well.

I made the mistake of thinking my 1 year old would think this was too spicy, she had 4 servings!  The 3 year old had two servings. We did the cheese on top instead of mixed in as each person has different allergies.  Great with corn chips...

Normally I have to make two dinners...my boys (DH & DS) are veggie and us girls are not.  But tonight at least I was a convert, if only for this dish  :)>>>

I left out the marjoram because I didn't have it, and I left out the Texas Pete Hot Sauce because this So*Cal Egyptian doesn't know what twang is  :P lol I also used Follow Your Heart Mozz. I think next time I'll add some coconut flakes if I'm feeling crazy ;)
