Creamy Avocado "Pasta"

What you need: 

2 medium sized ripe avocado, flesh of
1 lemon, zested and juiced, divided
1/4 cup basil
2 tablespoons extra virgin olive oil
2 to 3 cloves garlic, to taste
1 teaspoon kosher salt, to taste
2 medium zucchini, peeled into thin "noodles"
freshly ground black pepper, to taste

What you do: 

1. Sauce: Place the avocado, lemon juice, basil, olive oil, garlic, and salt in a food processor; process until smooth and creamy.
2. Place zucchini "pasta" into a large bowl. Pour on sauce and toss to thoroughly coat.
3. Garnish with lemon zest and black pepper. Serve immediately.

SO HOW'D IT GO?

I have zucchini and an almost-ripe avocado, gonna have to try this. I love ohsheglows for vegan recipes, everything I've made from that site has been awesome Cool

I made this for dinner tonight.  It's the first day I'm going raw for a personal 30 day raw challenge.  This was really good, very creamy as the name implies.  Almost like eating guacamole over pasta.  The only thing I would suggest is that it makes a lot for one person.  So next time I would half the recipe, because I'm the only one eating it at my home.

This was so great!  I loved any and everything to do with pasta; this helps me to bypass pasta but still get the great taste in.  I will be making more of this due to the fact my zucchini plants is doing so good this year.
