Couscous at its best

What you need: 

1 lb of fresh green beans, timed into 1 inch pieces
1 tab olive oil
1 clove of garlic, minced
1 lb of ripe tomatoes, finely diced
1 teaspoon salt
1/2 teaspoon dried oregano
ground black pepper
2 boxes of flavored couscous (I use toasted pine nut by Near East)
1 can chickpeas, rinsed

What you do: 

Cook green beans in a large salted pot of boiling water for 5-6 min, until tender and drain in a colander.
Heat oil in a large skillet (a wok is still my fav) to med heat and ad garlic. Cook garlic for about one minute and add tomatoes, salt, oregano, pepper, and green beans. Bring to simmer and cover with foil to cook for about 15 min. Cook couscous according to package directions, don't forget to double up when cooking two boxes! Uncover skillet and stir in chickpeas. Cook another 5 min or so. Serve on top of couscous.
I love making this! I have served this to many meat eaters who where expecting rabbit food and where amazed how filling and flavorful this is! I love serving this with falafel and my roasted red pepper hummus!

I stumbled back upon vegweb when looking for a recipe via Google, and found some of my old recipes here. These were from around 2002 and I am so happy people still are trying it! I still make this a few times a year!


Fantastic!  I made this last night for the sole purpose of having it for lunch the rest of the week, and it was sooo hard not to eat it all last night....
I buy my couscous in bulk, so I used a little less than a cup and cooked it with a bouillon cube.  Then I realized I only had one tomato left, which was a I over compensated by adding a ton of garlic - and I mean a ton!  Oh, and a pinch of cayenne pepper!  It really was quite awesome...might just be because I'm addicted to garlic though....


Very yummy... made too much and had to throw some out, unfortunately... but it was very good, could have used a bit more of a 'kick', maybe a bit more spice.
