Country Fried Seitan Steak

What you need: 

1 cup bread crumbs
1 teaspoon dried basil
1 teaspoon oregano
1 teaspoon paprika
1 teaspoon Old Bay Seasoning
kosher salt and fresh ground pepper, to taste
1/2 cup flour
1/2 cup nondairy milk (I use almond)
1 homemade seitan log, separated into 1" thick chunks
several tablespoons vegetable oil, as needed

What you do: 

1. Combine the bread crumbs and all the spices in a bowl. In another bowl, place the flour. Lastly, place the milk in a third bowl.
2. Dredge the seitan steaks (see my seitan recipe here: http://vegweb.com/index.php?topic=36498.0) in the flour, then dunk in the milk (make sure all the flour was saturated), then in the bread crumb mix. Repeat with all the steaks.
3. Wrap the now seasoned steaks in tin foil and put in the freezer for at least 4-6 hours but preferably up to 24 hours. This helps the seasoning stick better when you fry it.
4. Heat up a semi-deep skillet with vegetable oil. Once hot, place steaks in the skillet, enough that they all fit (if you have to do batches, do that). Fry each side until golden.
